Welcome back to Caitlin cooks on Monday








Last night, Caitlin made vegetable lasagna. She had a lot of fun putting it together, and learning about making pesto from scratch. The recipe called for store bought pesto to be mixed with the ricotta. We decided that she should make her own,since it is so simple and fun to make. It was another Cooking Light recipe, so that means that you have to either follow it to the letter, or do some switching up.She decided to add a bit more veggies. The one other lesson learned last night was, that carrots can be unpredictable. The recipe called for simmering the sauce and veggies for five min. It wasn't quite long enough to soften the carrots up. Even when the lasagna was cooked for an hour, those darn carrots stayed firm! Other than that, it was a very nice,light dinner. If anyone wants the recipe let us know.
