Tatin Aux Aubergines et Aux Pignons




A little bit of an arugula salad and dinner is complete!

First off, hoots and cheers that I survived June! Yesterday I decided to make this eggplant tatin recipe from Marie Claire Idees from 2003. The first time I make this was when I was living in France,so it has been a while. It came out wonderful the first time and I was hoping that I would get good results with American ingredients this time. Proof that it is a good recipe,since it turned out wonderful.
The first thing you have to do is get all the water out of the eggplant by sprinkling it with Kosher salt. I didn't use Kosher salt the first time and it was a tad bit salty. After about 30 minutes, you then scrape away the salt and begin to saute the eggplant in olive oil garlic and lemon juice. Let them cool. In a tart pan spread a bit of olive oil on the bottom then sprinkle a tablespoon of brown sugar. Sprinkle the pine nuts and arrange the sun dried tomatoes and a few sprigs of lemon thyme. Put the eggplant in by overlapping them in a circle. Cover with puff pastry and cook until the puff pastry is golden brown. We had an arugula salad that complimented the dish very well.
We have one slice left for lunch today.

  1. Oh wow. That is absolutely BEAUTIFUL!! I just bought a copy of the summer marie claire idees today... I was so happy the new edition was in the bookstore. I am going to have to try and reproduce that recipe!!

  2. That looks so delicious. I've never made a tarte tatin so may have to give this a go. I had to Google arugula as I didn't know what it was. Apparently it's what we call rocket (which I love) over here.

  4. I too had to google arugula (now there's a tongue twister!). And pleased to report that I am growing some in my garden which is just about ready to photograph and eat. Now, just need to get some "obo's" courtesy of the local market fruit stall. (PS: Note what is known as a "greengrocer's apostrophe")

  6. That looks so yummy! I love eggplant. We recently discovered that it is great on pizza. That's a far cry from your wonderfully sophisticated recipe.LOL! You always make the best things! Hope you have a great 4th!

  8. I made this yesterday with my first cutting of yellow and green courgettes from my allotment. It was delicious and I'm sure we'll be having it again. And so easy to make if you cheat with ready made puff pastry. (Secret's out)
