Pomegranate Beauty



We have a huge pomegranate tree in our back yard. Yesterday, Cyrous was kind enough to go out and harvest some of them for us. I usually wait too long, and the squirrels and birds get them before I get a chance to pick them. I've always loved them, and as a kid was fascinated by the ruby red seeds. I went on You Tube yesterday to get ideas on the best way to take the seeds out and juice them. I kinda like the method where you throw all the seeds in a blender and then strain them. I may try this, or I may just sit with a bowl and and eat them. I happened to capture the morning sun on them, and I think they are gorgeous!
Last night, for a quick fun dinner, I made "smashed potatoes." Caitlin isn't fond of mashed potatoes, so I made these very simple yet tasty red potatoes. I had seen this done in several magazine, and food blogs, and always wanted to give it a try. Just steam some red potatoes, when done, place them on a cookie sheet. Let them cool a bit, then smash them with the bottom of a glass.
Drizzle with olive oil and season. I roasted them at 400 until they were crispy. I also turned them in the middle of cooking.
A different take on sausage with potatoes! Our Whole Foods had the most yummy sausages yesterday, in their case: Turkey, cranberry , and apple! I just sauteed it with red peppers and purple onions.

  1. I drink gallons of pomegranate juice but sadly don't have a tree! I love mashed spuds but will have a go at smashing them instead.

  3. I'll be looking for those sausages at Whole Foods this weekend. Love the "smashed" potatoes. Sure wish I had a pomegranate tree in my backyard.

  4. We love pomegranates. We eat them as is, in salads, and in deserts. Love, love them. Never can get enough of them. Lately we have been taking pictures of pomegranates too. maybe I should post them so you can see. Carolina

  6. props to you for de-seeding those things. I'd rather pay the high price for the grocery store to do that. but I also don't have a Pom tree in my backyard!!!
