Blueberry pie = Fourth of July

Oh, you beautiful berries! I love making blueberry pies for the forth of July. I can't imagine making a different one. MAYBE cherry. A lot of people I know don't care for cherry pie though, including members of my family, so this is the pie I make for the fourth.
Six cups of blue berries , with a bit of lemon zest, lemon juice, sugar, cinnamon and flour.
I know somewhere on my blog I have said that pies are the easiest dessert to make, and I can't believe that most people are terrified to make pastry for them. I apologize if I am repeating myself, but they really are easy. There are people who put way too many ingredients in the crust, and swear that theirs is the best. I say keep it simple, and use a classic pate brisee recipe. It is simply, flour, butter, one teaspoon each, salt and sugar, and ice water to bind. Then you do your magic in the food processor for less than 30 seconds, and voila! What is so hard about this?? After chilling it for an hour in two round flat discs.....
Roll it out....
Fill it......
Do NOT forget the pats of butter. I have forgotten this and was so mad at myself.
Crimp....
Vent.....
Protect the edges. Then bake at 400 degrees for about an hour.
Here she is, all ready to consume.
Most of the time I do not get the pie out in time to collect the juices that have poured out of the pie while baking. It burns and then you have a mess, but this time I caught it just before it did this, and I collected it, so that I could put it back in the pie after I cut the first piece. I'm always so sad to loose so much juice. Please try and make a pie, even though you might be afraid, it gives you such a great sense of accomplishment!

I'm off now to make some salads for BBQ rib dinner. Happy 4th of July everyone!

  1. Yum! I have two pies that are my favorite: blueberry and lemon merengue. OK maybe three, apple. My daughter is dying to make cherry pie, but I just can't seem to get myself up for it. Love the idea of catching the juices, I would love a bowl of that for myself! You are very good to put it back into the pie.
